Grandma's Fried Instant Noodles

I know the photo is out of focus. But hungry mah!

Grandma used to fry this on the weekends we visit.

Boil water, cook 2 packs of instant noodles until about 90% done. Drain well.

Heat up a pan, add a bit of oil and fry 3 eggs. Scramble. Plate when cooked.

Add a bit more oil and stir fry a handful of shrimp and shredded cabbage.

When shrimp is cooked, put eggs and noodles back into the pan. Keep the contents moving and add oyster sauce and chilli sauce.

Serve when moisture is almost gone (no more big puffs of steam). Yum!

I remember grandma's long kitchen at the old house... the thin egg rolls they make during Chinese New year and you eating the ice pineapple tubes when we visit grandma... :P
